A well-balanced Japanese iron frying pan for everyday searing, frying and stir-frying. The 24cm size gives you useful cooking space without feeling as large or heavy as the 26cm model.

The eNZO Iron Frying Pan 24cm is made for cooks who want proper browning and strong heat performance without relying on a permanent synthetic non-stick surface.

Its 2.0mm-thick iron base holds heat steadily when ingredients are added, helping meat, fish and vegetables develop better colour. The pan is formed using a spinning process to create a broad cooking base and steep sides, giving food plenty of contact with the hot surface while helping keep ingredients and sauces inside the pan.

The 24cm size is a practical middle ground in the eNZO range. It provides enough room for gyoza, fish fillets, steak, vegetables and everyday meals, while remaining easier to handle than the larger 26cm model.

The handle combines natural beechwood with a stainless-steel flat bar, giving the pan a comfortable grip and the clean, refined look associated with the eNZO range.

As the pan is used and properly cared for, oil seasoning gradually builds across the cooking surface. This helps the pan become better conditioned and less prone to sticking over time.

Before first use

Wash the pan thoroughly and dry it completely.

The silicone-resin coating is applied to help protect the iron against rust during storage. It does not need to be burned off.

For better cooking performance, we recommend an initial oil seasoning:

  1. Heat the clean, dry pan gently.
  2. Add enough neutral cooking oil to coat the inside.
  3. Warm the oil over low heat for approximately three minutes.
  4. Carefully remove the excess oil.
  5. Wipe the remaining oil across the cooking surface with paper towel.

The pan and oil will be hot, so handle them carefully. Wahei Freiz recommends oil seasoning to help protect the iron and reduce sticking.

Cooking tips

Preheat the pan before adding food.

Use a little more oil during the first few cooks while the seasoning develops.

Avoid overcrowding the pan, as this can reduce browning and cause food to release moisture.

Remove cooked food soon after cooking rather than leaving it sitting in the pan for long periods.

Care instructions

Wash the pan while it is still warm using hot water and a tawashi or kitchen brush.

Avoid detergent for routine cleaning, as it can remove the oil seasoning. When detergent is needed for stubborn residue, dry the pan completely and repeat the oil-seasoning process.

After washing:

  • Dry immediately
  • Heat gently until all remaining moisture has evaporated
  • Wipe a very thin layer of cooking oil over the inside
  • Store in a dry place

Do not soak in water.
Do not put it in the dishwasher.
Do not store it while wet.

Important note

The silicone-resin coating is a temporary rust-protection coating, not a permanent conventional non-stick finish. It may gradually wear away as the pan is used.

Colour changes, darkening, cooking marks and gradual coating wear are normal for iron cookware and are not product faults.

Grandpa Chen’s note

The 24cm is the balanced everyday choice in the range.

It gives you enough room for a proper meal, but it is still comfortable to lift and use regularly. It needs more care than a conventional coated pan, but the wash, dry and oil routine becomes simple once you get used to it.
