A Japanese-made rectangular iron pan designed for tamagoyaki, rolled omelettes and everyday egg cooking. The 14 × 18cm cooking area gives you room to spread, roll and shape neat layers, while the natural wooden handle provides a comfortable grip.

Making tamagoyaki in a round frying pan is possible, but the right shape makes the job much easier.
The Chitose Iron Tamagoyaki Pan has a rectangular cooking surface that helps you spread each egg layer evenly, roll it forward and create the familiar straight-sided shape of Japanese tamagoyaki.
Made from iron, the pan responds well to heat and develops better oil seasoning the more it is used. With proper care, the cooking surface becomes less prone to sticking over time. The sides are slightly deeper to help keep egg mixture and ingredients inside the pan while cooking.
The 14 × 18cm size is useful for making a generous rolled omelette, Korean-style rolled egg, bento portions and other small pan-fried dishes. It is suitable for both gas and IH/induction cooktops.

The official manufacturer lists the body as iron with a silicone-resin coating. The coating helps protect the iron against rust during storage and early use; the pan still requires oil seasoning and normal iron-pan care.
Before first use
Wash the pan thoroughly and dry it completely.
Oil seasoning is required before the first cook:
- Heat the clean pan over medium heat until all moisture has evaporated.
- Turn off the heat and add enough neutral cooking oil to coat the inside generously.
- Warm the oil over low heat for approximately three minutes.
- Turn off the heat and carefully remove the excess oil.
- Use paper towel to spread the remaining oil over the cooking surface.
Take care during this process, as the pan and oil will be hot. Wahei Freiz recommends oil seasoning to create a thin oil layer and help reduce sticking.
Cooking tips
Preheat the pan before adding the egg mixture.
During the first few uses, coat the cooking surface with a little more oil while the seasoning develops.
Cook tamagoyaki over low to medium heat so each layer sets without browning too quickly.
Remove the omelette soon after cooking rather than leaving it sitting in the pan.
Do not use this pan for deep-frying. The manufacturer specifically warns against using the Chitose iron tamagoyaki pans for deep-frying.
Care instructions
For normal cleaning, wash the pan while it is still warm using hot water and a tawashi or kitchen brush.
The manufacturer recommends avoiding detergent for routine cleaning because it can remove the oil seasoning. When detergent is needed for heavy residue, dry the pan thoroughly and season it again.
After washing:
- Dry immediately
- Heat gently until all remaining moisture has evaporated
- Wipe a very thin layer of cooking oil over the inside
- Store in a dry place
Do not soak in water.
Do not put it in the dishwasher.
Do not store it while wet.
Important note
The silicone-resin surface coating is intended to help protect the iron against rust before and during early use. It may gradually wear or peel as the pan is used. This is normal and is not a product fault.
The pan may also darken, develop cooking marks or change colour as the oil seasoning builds. These changes are part of using traditional iron cookware.
Grandpa Chen’s note
This is a specialist pan, but it does not have to sit in the cupboard waiting for tamagoyaki day.
The rectangular shape is also handy for Korean rolled egg, bento portions and small everyday cooking jobs. It needs more care than a coated non-stick pan, but wash, dry and lightly oil it properly, and the surface will improve as you use it.
