Description

A Japanese-made 24cm iron frying pan with slightly deeper sides, a wooden handle and a tempered-glass lid. Suitable for gas and induction cooking, it is a practical everyday pan for stir-fries, searing, gyoza, vegetables and covered cooking.

Product description

Some frying pans are easy on the first day but do not age particularly well. This one works the other way around: with proper use and care, the iron surface becomes better seasoned and easier to cook with over time.

The Chitose 24cm Iron Frying Pan has slightly deeper sides to help keep ingredients inside while stirring and turning. Use it uncovered when you want good browning, or add the glass lid when you need to hold in heat and moisture.

It is a useful size for everyday meals, whether you are cooking yakisoba, gyoza, vegetables, meat, fish or a quick stir-fry. The wooden handle gives it a comfortable, traditional finish, while the clear lid lets you check your food without repeatedly lifting the cover.

The iron body has a silicone-resin coating to help protect it from rust during storage and early use. This is not a permanent conventional non-stick coating. It will gradually wear away as the pan is used and develops its own oil seasoning. Changes in colour and appearance are normal for iron cookware.

Before first use

Wash the pan thoroughly and dry it completely.

The silicone-resin protective coating does not need to be burned off.

For the best start, oil-season the pan before cooking:

  1. Heat the clean, dry pan gently.
  2. Add enough neutral cooking oil to coat the inside.
  3. Warm the oil over low heat for a few minutes.
  4. Remove the excess oil and carefully wipe a thin layer over the cooking surface.

The pan will continue developing its seasoning through regular cooking.

Everyday cooking tips

Preheat the pan before adding food and use enough cooking oil, particularly during the first few uses.

Avoid leaving cooked food, salty sauces or acidic ingredients sitting in the pan for long periods after cooking.

Use the glass lid when you want to retain moisture or finish thicker ingredients more gently.

Care instructions

Wash the pan while it is still warm using hot water and a tawashi or soft kitchen brush.

Avoid detergent where possible, as frequent detergent use can remove the oil seasoning. When detergent is needed, dry the pan thoroughly and oil-season it again.

After washing:

  • Dry immediately
  • Heat gently to remove any remaining moisture
  • Wipe a very thin layer of cooking oil over the inside
  • Store in a dry place

Do not soak.
Do not place in the dishwasher.
Do not store while wet.

Important note

The silicone-resin surface coating is there to protect the iron from rust before and during the early stages of use. It will naturally wear away over time. This is normal and is not a product fault.

Iron cookware may darken, develop marks or change colour as it builds seasoning. These changes are part of owning and using an iron pan.

Grandpa Chen’s note

The glass lid is what makes this pan especially useful. You can sear or stir-fry first, then cover the pan to finish cooking without changing cookware.

Just remember: this is iron, not a set-and-forget coated pan. Give it the proper wash, dry and oil routine, and it will become a much better cooking companion over time.
