The Chitose Premium Iron Frying Pan 26cm is for cooks who want the heat performance of iron cookware without using a permanently coated non-stick pan.
Iron handles higher cooking temperatures well, making it especially useful for browning, searing and fast stir-frying. The pan is also designed with slightly deeper sides, helping keep ingredients inside while you stir, turn or toss them.
Unlike conventional non-stick cookware, this pan develops its cooking surface through use. As oil seasoning builds, the surface becomes better conditioned and less prone to sticking. With proper washing, drying and oiling, it can become one of those pans you keep reaching for year after year.

Before first use
Wash the pan thoroughly, then heat it until completely dry.
Oil-seasoning is required before the first cook:
- Heat the dry pan over medium heat for approximately 2–3 minutes.
- Turn off the heat and add a generous amount of neutral cooking oil.
- Heat the oil over low heat for approximately 3 minutes.
- Turn off the heat and carefully remove the excess oil.
- Rub the remaining oil over the cooking surface with paper towel.
Take care when handling the pan and oil, as both will be hot. Wahei Freiz recommends this initial seasoning to help the iron absorb oil and reduce sticking.
Everyday cooking tips
Preheat the pan properly before adding ingredients.
During the first few uses, cook with a little more oil while the seasoning develops.
Remove food soon after cooking rather than leaving it sitting in the pan.
The protective silicone-resin coating helps guard the iron against rust before and during early use. It may gradually wear or peel as the pan is used. This is normal and does not mean the pan is defective.
Care instructions
While the pan is still warm, wash it with hot water and a tawashi or kitchen brush.
Avoid detergent for normal cleaning because it can remove the oil seasoning. When detergent is needed for heavy soiling, dry the pan thoroughly and season it again.
After washing:
- Dry the pan immediately
- Heat gently until all moisture has evaporated
- Wipe a very thin layer of cooking oil over the inside
- Store in a dry place
Do not soak.
Do not put it in the dishwasher.
Do not store it while wet.
Do not leave cooked food in the pan for extended periods.
Important note
This is traditional iron cookware, not a maintenance-free non-stick pan.
Colour changes, darkening, seasoning marks and gradual wear to the factory-applied protective coating are normal. These changes are part of the pan developing through regular use.

Choose the 26cm size when you want a bit more room for tossing vegetables, frying dumplings or cooking a larger batch without crowding the pan.
It needs more care than a coated pan, but that is the trade-off: wash it, dry it and lightly oil it, and the cooking surface will improve as you use it.
